|I had the pleasure of working with Erin Schwartz, Owner and Cake Artist of Stacked at a recent Bat Mitzvah and was blown away by her creativity and talent. Seriously, you have got to see her cakes! They are edible works of art that taste and look great. I was so excited when she agreed to let me know more about her and her business.
How did you get started in your business?
I created my first cake when I was a teenager for my friend’s 16th birthday. It was such a fun and rewarding experience I fell in love with cake decorating and made cakes for friends and family whenever I could. Upon graduating high school, I attended The Culinary Institute of America in upstate New York where I graduated Valedictorian. After school, I worked at a high-end custom cake shop in New Jersey (where I’m originally from) for a couple of years, contracted at bakeries as their cake artist and started to develop my own style. In 2014, I moved to Virginia and started Stacked! In 2016, we opened our brick and mortar in Ashburn-where we also teach and host decorating classes for students from around the world! Since opening, I’ve gotten to travel the country teaching cake decorating, made numerous appearances on national television (including Food Network and The Cooking Channel) and more! We’re always excited to see what’s next!
What’s your favorite part of what you do?
My favorite part of what I do is 2-fold. I absolutely love that every cake I create is different and tailored to each Client. Since we are not a production/retail bakery, each cake is baked specifically for the Client using the highest quality ingredients and design options are endless. We’ve done small simple cakes, stunning tiered cakes and even life-size sculpted cakes with special effects! The other aspect I love is seeing the Client’s reactions. I’ll never tire of seeing someone eyes fill with tears of joy when they see their perfect cake come to life!
What’s your pop color–that something special that makes you, you?
I truly put my passion into every cake I create. Whether it’s a birthday, wedding, shower or something else- I strive to give people something so much more than cake. Not only is the cake delicious, but also it’s a piece of art-that guests will admire and take pictures of and with throughout the celebration!
What’s your favorite moment of a Bar or Bat Mitzvah?
I love seeing a Client’s first reaction seeing the cake! We do everything we can to go above and beyond expectations.
What questions should parents ask someone in your field?
I always say there is a baker for every Client. It’s important to know what’s most important to you! If you’re getting a custom cake, it’s great to have inspiration for your cake artist and let them know specifics of what you are looking for and then let them use that to create something unique and special for you!
